Red Velvet Cupcakes | Valentine’s Day Bake

They do say that food is the way to the heart.

This Valentine’s Day why not skip the shop bought gifts and instead whip up a batch of red velvet cupcakes? These delicious cupcakes are a nice way to show someone you care. Here at LGSM we have you covered this with a full proof recipe.

Ingredients for Cupcakes (makes 12):

  • 150g plain flour
  • 1 tablespoon of cocoa powder
  • 1 teaspoon of bicarbonate of soda
  • 50g of salted butter
  • 150g caster sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 50ml of milk
  • 50ml of vegetable oil
  • 2 tablespoon of red food colour

Ingredients for Buttercream:

  • 140g of butter
  • 280g of icing sugar
  • 1 teaspoon of vanilla extract
  • few drops of food colouring (optional)

  • 1 mixing bowl
  • 1 tablespoon
  • 1 teaspoon
  • Weighing scales
  • 1 Whisk
  • 1 Mixing spoon
  • 1 Cupcake tray
  • 12 Cupcake cases

  1. First, preheat the oven to 180C and line the cupcake tin with the cases.
  2. Then, using a whisk, beat together the caster sugar and butter until they become light and fluffy.
  3. Next, mix in the egg, milk, oil and vanilla until well combined. Sieve in the flour, cocoa powder and bicarb into the bowl and mix until you can no longer see them.
  4. After that, pour in the red food colouring until it becomes a dark red. (This can depend on what brand you buy.)
  5. Divide the batter between the cupcake cases, then bake for 15-20 minutes.
  6. Once cooked, set them aside to let them cool, then you can begin on the buttercream.
  7. To make this, whisk the butter until soft then beat in half of the icing sugar until there are no lumps. Add the remaining icing sugar along with the vanilla extract and then beat until creamy and smooth.
  8. Then if you desire add a few drops of food colouring and decorate how you wish.
